做(zuò )法(fǎ ):洗(xǐ )净宰好(hǎo )鲫鱼(yú ),洗(xǐ )净(jìng )淮山和(hé )薏米(mǐ )。用(yòng )清(qīng )水把陈(chén )皮泡(pào )软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块在锅上(shàng )擦一(yī )遍,放(fàng )两勺(sháo )油,待油六成热下(xià )鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的(de )清水,放入(rù )煎煮好的鲫(jì )鱼和(hé )其他材料,武火煮(zhǔ )沸,转中小火煲一个(gè )半小(xiǎo )时(shí ),下盐调味即可(kě )品尝。
