做(zuò )法(fǎ ):洗净宰好(hǎo )鲫鱼,洗净淮山(shān )和薏米。用(yòng )清(qīng )水把陈(chén )皮(pí )泡软,拍裂一小块(kuài )姜(jiāng ),热锅,用(yòng )姜(jiāng )块在锅上擦(cā )一遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎(jiān )至(zhì )微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和(hé )其他材料,武火煮(zhǔ )沸(fèi ),转中(zhōng )小火煲一(yī )个半(bàn )小时(shí ),下盐调味即(jí )可(kě )品尝。
